• Ingredients of Recipe
For Rice
- 2 cup basmati rice
- 4 cup water
- 2 bay leave
- 4-5 clove
- 2 green cardamom
- Cinnamon stick 1 inch
- Salte to taste
For Vegetable Layer
- 2 tablespoon ghee or oil
- 1 cup chopped mixed vegetables (carrots, beans, peas, cauliflower etc.)
- 1 sliced large onion
- 1 tablespoon ginger-garlic paste
- ½ cup plain yogurt
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 2 tsp biryani masala
- Salte to taste
For Layering
- Few saffron strands soaked in 3 tablespoon warm milk
- 2 tablespoon chopped coriander leave
- 2 tablespoon chopped mint leave
- 1 tablespoon fried onion (optional)
• Instructions of Recipe
Step 1: Cook Rice
- Wash basmati rice and soak for 20-30 minutes
- Take large pot, boil water with bay leave, clove, cardamom, cinnamon and salt
- Add soaked rice and cook rice 80%, drain and set side
Step 2: Prepare Vegetable Layer
- Take a pan and heat ghee or oil. Add sliced onions and saute until golden brown color
- Add ginger-garlic paste and cook
- Add chopped tomatoe and cook until soft
- Add turmeric powder, red chili powder and biryani masala and mix well
- Add all chopped vegetables and cook 5 minutes
- Lower the heat, add yogurt. Cook until vegetables are tender
Step 3: Layering Biryani
- Take heavy bottomed pot, layer half of rice
- vegetable mixture over the rice
- Add remaining rice on the vegetable layer
- Add saffron milk, mint leave, coriander leave and fried onion
Step 4: Dum Cooking
- Cover pot with tight lid
- Cook on low hit for 20-25 minutes
