For Filling (Puran)
- 1 cup chana dal
- 1 cup grated jaggery
- ¼ tsp cardamom powder

- 1.5 cup whole wheat flour
- ½ cup all purpose flavor
- ¼ tsp turmeric powder
- Pinch of salt
- Water (as required)

Step 1: Prepare Dough
- Mix wheat flour, all purpose flavor, turmeric powder and pinch of salt is bowl.
- Gradually add water and knead into soft dough.
- Add oil or ghee, knead again and set aside for 30 minutes.
Step 2: Cook Chana Dal
- Rinse chana dal and pressure cook with 2 cup water until chana dal soft but not mushy (2-3 whistles).

- Roll out small dough ball into 4 inch disc.
- Place portion of puran in center, seal edges and flatten it gently.
- Roll it into thin, round flatbread.

- Heat tawa on medium heat.
- Transfer rolled poli into tawa and cook 1-2 minutes.
- Flip poli and apply ghee, cook until golden brown on both side of poli.
